My wife learned in the alleyways of our old apartment (ok maybe 15 minutes at the most), a few trips around our street (we live on a street that is a complete circle) and after she kinda had the hang of the clutch and brake I started dragging her around the neighborhood. Luckily, I know areas where we have little traffic. She had only maybe 4 hours seat time (at the most) before Rides of March but that long ride did more for her confidence and ability than anything. Granted, not everybody picks it up like she did.

I would have her dump the clutch a few times so she can start to see where it catches and where it will kill the bike. Lambrettas aren't as twitchy as vespas in this department.

I also would have her cruise around in first for a while until she gets comfortable with where the brakes are. She'll figure out the clutch easily enough in this time but she needs practice to get the instinct of the brakes. After she's comfortable, let her cruise around.
