Cover up the speedo with tape so she doesn't keep looking down to know when to shift. My first ride was on a long curved road which went around a small mountain. I was so intent on what speed to shift I didn't see the road turning and went off the road and down the side of the mountain.
Have her learn by sound and feel so she keeps her eyes on the road...
